Nicknamed the "sunshine vitamin", vitamin D is a fat-soluble vitamin that comes essentially from skin biosynthesis under the effect of ultraviolet radiation. Only 10 to 20% of vitamin D comes from an exogenous source, via the absorption of vitamin D-rich foods. This cutaneous synthesis depends, in particular, on the pigmentation of the skin, the use of sun creams, the season and the latitude. Currently, as a result of urbanization, sedentary lifestyle and sun exposure recommendations, skin production of vitamin D is decreasing.
Vitamin D has many properties. It is one of the major components of phosphocalcic metabolism and is involved in bone mineralization as well as in the maintenance of adequate calcium levels. It also contributes to the normal functioning of the immune system in maintaining normal muscle function.
There are two forms of dietary vitamin D: vitamin D2 or ergocalciferol synthesized by plants, and vitamin D3 or cholecalciferol, mainly of animal origin, which is more effective than vitamin D2.
